Sodium Benzoate Preservative

E211 Sodium Benzoate has the chemical formula NaC6H5CO2.
This compound is the sodium salt of benzoic acid and is soluble in water.
It can be produced by combining sodium hydroxide with benzoic acid.

Applications of Sodium Benzoate Preservative:

It is used as a food preservative.
In acidic environments, it prevents the activity of bacteria and fungi—particularly in foods such as salad dressings (vinegar), carbonated drinks (carbonic acid), jams and fruit juices (citric acid), pickles (vinegar), and sauces.
The permitted concentration as a food preservative, according to the FDA, is limited to **0.1% by weight**.
