It is used as a food preservative.
In acidic environments, it prevents the activity of bacteria and fungi—particularly in foods such as salad dressings (vinegar), carbonated drinks (carbonic acid), jams and fruit juices (citric acid), pickles (vinegar), and sauces.
The permitted concentration as a food preservative, according to the FDA, is limited to **0.1% by weight**.
