Sodium Citrate

Known by the formula NACHO, it is sometimes simply referred to as sodium citrate.
Sodium citrate is the salt of citric acid and has a slightly salty and slightly sour taste.
Because of the sodium and calcium citrate salts, it is commonly called a “sour salt.”

Applications of Sodium Citrate:

Flavoring agent and preservative

Sodium Citrate in Pizza Cheese:

Used to preserve and improve product stability for longer shelf life.

Sodium Citrate in Processed Cheese:

Used as emulsifying salts or melting salts.
