KMK 2000 (anti-mold, preservative, substitute for natamycin)

KMK 2000 (Anti-Mold, Preservative, Natamycin Alternative) is a protective and preservative substance that directly affects unwanted mold, yeast, and fungi present in food products. By inhibiting their growth, it helps maintain quality and extend the shelf life of the product. It is an excellent alternative to other preservatives such as Natamycin.

Effect of KMK 2000 Preservative on Molds, Yeasts, and Fungi:

The antimicrobial activity of KMK 2000 increases as the pH of the environment decreases, indicating that these compounds exhibit antimicrobial properties in their non-ionized form.
KMK 2000 preservatives, known for decades as antifungal agents due to having a carboxyl group with no branching, were later shown—based on research from the 1930s—to be more effective when containing double bonds compared to saturated acids with identical carbon chain lengths.

In 1945, Gooding obtained the rights to use unsaturated fatty acids with a double bond in the alpha position as antifungal agents in food products and packaging.
For this reason, the compounds used in KMK 2000 play a significant role in antifungal (anti-mold and anti-yeast) functionality.

The antimicrobial effect of KMK 2000 against molds and yeasts is stronger than its effect on bacteria.
KMK 2000 is widely recognized as an antifungal compound. Lowering the pH intensifies its activity since, like other carboxylic acids, it dissociates at higher pH levels and becomes less active.

Advantages of KMK 2000 in Eliminating Molds, Yeasts, and Fungi:

KMK 2000 reduces microbial and spore populations and has a strong preservative effect in meat and meat products, dairy products, and beverages.
With its antimicrobial properties, KMK 2000 prevents the growth of a wide range of microorganisms in these products.
It also exhibits antibacterial activity, which is further enhanced when used together with antibacterial compounds.
Another benefit of KMK 2000 is its water-binding capacity, which prevents syneresis (water separation) in food products—thereby limiting the conditions that promote mold and fungal growth.

Heat Resistance of KMK 2000 Preservative:

KMK 2000 remains stable at high food-processing temperatures and significantly enhances moisture retention in meat products.

Applications of KMK 2000 (Anti-Mold, Preservative):

This preservative is used as an anti-mold and anti-yeast agent in various fruit juices, beverages, and frozen products.
It is also used as an anti-mold and anti-yeast preservative in dairy products such as yogurt, doogh (yogurt drink), different types of cheese, cream, butter, and dairy beverages.
KMK 2000 is suitable for use in kashk as well.
It is also applied as an anti-mold and anti-yeast preservative in sauces, ketchup, salad dressings, and ready-to-eat foods.
Additionally, it is used in pasteurized liquid egg products.

This product is manufactured in Turkey and is exclusively distributed in Iran by Dayan Arman Pouya Company.
