A multi-functional antimicrobial polymer derived from a type of fungus.

Fungal chitosan is a natural polymer obtained from the cell walls of fungi and is approved as a naturally sourced additive.
Chitoly comes in two types:
• **Insoluble fungal chitosan**, obtained from *Agaricus bisporus*
• **Water-soluble chitosan**, obtained from *Pleurotus ostreatus*

Both types can be used as polymers to reduce quality losses caused by microbial spoilage, enzymatic and non-enzymatic browning, and rapid vitamin degradation during the shelf life of fruits, vegetables, juices, and fresh meat products.
